1 cup quinoa
2 cups water
2 T. olive oil
2 cloves garlic
1 zucchini, diced
1 small eggplant, chopped
1 tomato, chopped
1 cup tomato sauce
Salt & pepper to taste
6 bell peppers, tops cut off & seeded
1 cup mozzarella cheese, or more to taste**

Directions:
Preheat oven to 350. Line baking dish with foil.
Mix quinoa & water, bring to boil. Cover & reduce heat, simmering until quinoa is tender & water is absorbed (about 15 min.).
Heat oil in large skillet over med. heat; cook & stir onions & garlic until fragrant & slightly translucent
(5-7 min.). Add vegetables (except peppers); cook until slightly tender, 3-5 min. Stir tomato sauce into mixture; cover & simmer until vegetables have softened, about 10 min.
Stir quinoa into vegetable mixture. Season with salt & pepper. Fill peppers with mixture; place in dish & cover with foil.
Bake in preheated oven until peppers are slightly tender, about 18 min. Remove foil, sprinkle peppers
with cheese. Bake until cheese is bubbling & melted, approx. 5 more minutes.

** I find I prefer a stronger cheese, such as old cheddar, also mixing it in with the veg., as well as on top.
