2 Tbsp oil
1 cup raw long grain rice
1/2 c. chopped onion
1 clove garlic (minced)
1/2 tsp cumin
1/4 tsp chili powder
1 can diced tomatoes (drained) or 2 large fresh tomatoes (chopped)
1.5 c. chicken broth
2 Tbsp pimiento

Directions:
Directions:
Heat oil in cooking pan at medium heat. Add rice and cook for 2 min. Add onion and cook for another minute. Add garlic, cumin, chili powder and tomatoes. Cook for another 2 min. Stir in broth and bring to a boil. Reduce heat to low, cover and simmer for 15 min. Stir in pimiento; cover and cook for another 5 min.
