6 slices bacon in 1" pieces
2 broiler Fryers cut up
1/2 cup of flour
2 tsp. salt
1/4 tsp. pepper
1 large onion chopped
1 clove garlic, minced
1 can whole mushrooms
2 cans (19 oz) tomatoes
1/4 cup chopped fresh parsley
4 or 5 drops Tobasco sauce
1 cup of croutons

Fry bacon until almost crisp in large skillet. Lift out with a slotted spoon; drain on paper towels and reserve. Leave drippings in pan.

Shake chicken in mixture of flour, salt and pepper in a plastic bag to coat well; reserve remaining flour. Brown chicken a few pieces at a time in bacon drippings, place in a shallow 12 cup casserole.

Saute onions and garlic until soft in same pan; stir in reserved flour mixture. Drain liquid mushrooms. Stir liquid, tomatoes, parsley and red pepper sauce into pan. Bring to a boil, stirring constantly. Spoon over chicken in casserole and cover.

Bake in 350 degree F oven for 1 hour and 20 minutes, or until chicken is tender. Uncover and sprinkle bacon pieces and mushrooms. Bake 10 minutes longer or until bacon is crisp. Sprinkle with croutons before serving.
