COOKIES
1 cup sugar
1/2 cup oil
1 tsp. milk
1 large egg
1 cup pumpkin puree
1 tsp. vanilla
2 cups flour
1 1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking powder
1 tsp. baking soda

1. Beat together sugar and oil.
2. Add egg, milk, pumpkin and vanilla. Beat well
3. In a separate bowl mix dry ingredients together.
4. Add dry mixture to wet, just until mixed.
5. Drop batter by spoon full onto greased baking sheet.
6. Bake @ 375 for 10-12 minutes.

FROSTING
3 tbsp. butter
1/4 cup heavy cream
1/2 cup packed brown sugar
pinch of salt
2 cups powdered sugar
1 tsp vanilla

1. In a saucepan combine butter, cream, sugar and salt.
2. Cook over medium heat stirring constantly until it boils.
3. Remove from heat and stir in vanilla and powdered sugar. Cool and frost over cookies
