Vegan Double Chocolate Chip Cookies Recipe

1 1/4 c all purpose flour
1/4 c Dutch process cocoa powder
1/4 tsp baking powder
3/4 tsp salt
1/4 c + 2 T coconut oil
1/2 c granulated sugar
1/4 c brown sugar
1 tsp vanilla extract
1 c semi sweet vegan chocolate chips
2 T flax meal (replaces the egg)
opt: 3/4 c walnuts pieces

Directions:
Directions:
In a small bowl, combine flax meal and 1/4 c + 2 T cold water, chill until thick about 15 minutes. In another small bowl, mix flour, cocoa powder, baking soda and salt. In a large bowl mix coconut oil and both sugars until creamy. Add flax mixture and vanilla until smooth. Add flour mixture and beat until combined. Fold in chocolate. Add in walnuts, too (if using).
Scoop into balls and place on cookie sheet, refrigerate until firm, about 30 minutes.
Pre-heat oven to 325º Bake 12 - 14 minutes, cool. Sprinkle with confectioners sugar for a finishing touch.
