2 c sugar
2 c flour
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 1/2 c vegetable oil
4 eggs
3 c grated carrots
1 c chopped nuts (optional)
1 tsp vanilla

Cream Cheese Icing
1/2 c melted butter
1 8-ounce (250g) package cream cheese, softened
1 tsp vanilla
1lb icing sugar

Directions:
Directions:
Sift together sugar, flour, soda, salt, cinnamon. Stir in oil. Add eggs, one at a time, mixing well after each addition. Add carrots, nuts and vanilla, mixing thoroughly. Pour into a floured and greased (use PAM; or even easier use parchment paper) 13x9x2 inch cake pan. Bake at 350F for 30 minutes. Cool in pan. Spread Cream Cheese Icing on top.

Icing
Combine butter, cream cheese and vanilla, mixing well. Gradually add icing sugar, beating until smooth and desired consistency. Spread on cooled cake.
