8 oz. pkg. softened cream cheese
8 oz. whipped topping
1 pkg. shortbread cookies
Strawberries
Blueberries
Kiwi
Mandarin oranges
[or other fruit/berries]
Directions:
Directions:
Beat together the softened cream cheese and whipped cream. Wash and cut up strawberries, kiwi, and mandarin oranges. Spread the cream cheese mixture onto the shortbread cookies and top with cut fruit. Leave covered mini fruit pizzas in the refrigerator overnight for a softer crust.

Sean wanted to make fruit pizza for the Portland's Singing Christmas Tree youth cast bake sale, but we didn't find this recipe until afterwards, so he made peanut butter rice Chex cookies instead. But the single cookie size makes them easier to serve and eat than a full size fruit pizza!
