1 baked pie crust
1 1/2 c. sugar
1/3 c. cornstarch
1 1/2 c. water
3 slightly beaten egg yolks
3 T. butter
4 T. lemon juice
1 1/3 T. grated lemon peel

Meringue:
3 egg whites
1/4 tsp. cream of tartar
6 T. sugar

Directions:
Preheat oven to 400 º.
Mix sugar and cornstarch in saucepan. Gradually stir in water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 min. Slowly stir half hot mixture into egg yolks; beat egg yolk mixture into hot mixture in saucepan. Boil 1 min. longer, stirring constantly. Remove from heat. Continue stirring until smooth. Blend in butter, lemon juice and peel. Pour into baked pie shell. Prepare meringue as described below. Then cover pie with meringue. Bake for 8 - 10 min. until a delicate brown. Serve when cool.

To make Meringue: Using either a hand mixer or stand mixer, in a clean, dry, metal mixing bowl, beat egg whites with cream of tartar until frothy. Gradually beat in sugar, a little at a time. Continue beating until stiff and glossy. Pile meringue onto pie filling, being careful to seal the meringue onto the edge of crust to prevent shrinking. Swirl or make points for decorative top. Ready to bake!

I loved Mom's (Grandma Carraher) Lemon Meringue Pie and asked for it for my birthday a few times. She always made it perfectly. I never learned how she made her perfect pie crust, but I have always liked using Jiffy brand boxed pie crust mix. It is easy and tastes good.
