Ingredients: 1lb. chicken or leftover turkey 1lb.andouille sausage or any smoked sausage cut in 1/2 in. slices 1-2 onions 1 small bunch green onions 1bell pepper chopped 1/2 cup chopped celery 2-4 cloves garlic chopped salt , black pepper,and red cayenne or Cajun spice 3/4c. flour and 1 cup of oil--for the roux 1 lb. of cut okra-frozen, fresh or canned 1 large can of tomatoes 6 cups of water 2 quarts of chicken broth 1-3 tbsp. of parsley 2-3 bay leaves

Directions:Begin by making the roux by heating the oil in the pot and add the flour-stirring and adjusting the heat as you go. The roux should be brown to dark brown in color. You don't want to burn it so watch your heat. Then add the okra and some water. It will become slimy as it cooks. This gives the gumbo its texture. Continue to add the rest of the vegetables and stock and water. The tomatoes with the juice sweetens the roux. Cover and simmer until the onions are clear. Add stock or water if need be. Cover and simmer for 1/2 hour. Add the sausage and chicken or turkey. Increase heat until mixture boils. Lower heat, cover and cook 1 1/2 -2 hrs. You may add a pinch of a poultry seasoning-like paul prudhomme's seasoning. You may transfer it to a large crock pot on low. Serve over rice. |

Notes: This is a favorite dish to make after Thanksgiving. I boil the turkey carcass to remove all the meat.I strain the turkey stock and reserve some to add to the pot of gumbo. This gumbo can be frozen in a container. Great for when you are watching the football games. Everyone helps themselves.
