1/2 lb mushrooms, coarsely chopped
1 1/4 cups pitted olives, coarsely chopped
3 tbsp. butter
1/4 c. bread crumbs
1/2 c. green onions, chopped
1 1/2 cups swiss cheese, grated
1 c. cottage cheese
3 eggs
1/2 tsp. thyme
3/4 c. parsley, finely chopped

Directions:
Directions:
Sauté mushrooms and 3/4 c. olives in butter until coated with butter (about 20 seconds). Stir in bread crumbs. Spoon into 9 inch quiche pan or pie plate and press evenly against the bottom and sides. Sprinkle green onions, grated swiss cheese and 1/2 c. olives into the shell. In a blender, process cottage cheese, eggs and thyme until smooth. Pour into shell. Bake at 375 degrees for 25-30 minutes. Cover loosely with tin foil if the top starts to get too brown. Let stand for 10 minutes and sprinkle with parsley before serving.
