6 lbs. cucumbers
3 green peppers
2 lbs. onions
2 red peppers

1/2 c. coarse pickling salt
8 c. boiling water

4 c. vinegar 6 c. white sugar
1 tsp. turmeric 1 tsp. celery seed
2 tsp. mustard seed

Directions:
Directions:
In a food processor or meat grinder, ground cucumbers, peppers and onions.
Place in a very large pot on the stove.
Add 1/2 c. coarse pickling salt and 8 c. boiling water.
Let stand overnight, covered.

In the morning, drain most of the liquid (thru a cloth or fine sifter) and put mixture back in large pot. Then add in the vinegar, sugar, turmeric, celery & mustard seeds.

Slow cook for 1 1/2 to 2 hours.
Place relish in jars and seal.
