6 sweet potatoes OR 6 regular large potatoes (or a combination)
1 tbsp olive oil
1/2 tsp ground cumin, paprika and dried oregano (or Italian herbs)

Directions:
Directions:
Wash potatoes, you can leave skins or or peel off if you prefer
Cube the potatoes, put them in a bowl, add the oil and spices.
Mix until evenly coated with spices

Place on a baking sheet in the over at 450 degrees
Bake for approximately 20 minutes

Much healthier than pre-packaged!
