Salad~some or all of:
1/2 lb. bacon
1 qt. fresh spinach
1 qt. fresh lettuce
1 c. sliced fresh mushrooms
3 c. Swiss cheese, grated
1/2 c. red onions, ringed
1-11 oz. can mandarin oranges, drained
1 c. cottage cheese (add gently, at the last minute)

Dressing 1:
3/4 c. red vinegar
1 1/2 Tbsp. poppy seed
1 1/2 tsp. salt
3/4 tsp. mustard
3/4 c. sugar
1 medium purple onion, chopped
1 1/2 c. oil
1 1/2 Tbsp. sliced green onions

Dressing 2:
1 tsp. Worcestershire sauce
1/2 c. sugar
1 tsp. salt
1/4 c. vinegar
1/3 c. tomato ketchup

Directions:
Directions:
Cook and crumble bacon. Wash spinach and lettuce, and stem spinach; cut into bite-size pieces. Put greens and bacon in a salad bowl, and toss with the other toppings. Serve with dressing on the side. About 12 servings.

Dressing 1: Blend all ingredients in the blender. Refrigerate until ready to use.

Dressing 2: Measure ingredients into a jar, and cover; shake to blend. Keep in refrigerator.
