8 new potatoes, cubed, boiled till tender, & drained
2 c. peas, cooked and drained
1/4 c. butter or margarine
1/4 heaping c. flour
2 c. milk
1 tsp. salt
1/4 tsp. pepper
1/3 c. cheese, grated

Directions:
Directions:
Melt butter. Using a small whisk start adding flour to butter. Take pan off burner. Add a little bit of milk and whisk to keep sauce smooth. Alternate adding flour and milk, stirring until smooth.

Bring to a boil, stirring constantly. Add salt, pepper, and cheese. Stir until sauce is thick. Fold sauce over hot potatoes and peas.

A springtime favorite, especially for those of us who had big vegetable gardens. When I was in middle school, our black Cocker Spaniel, Kitty, used to eat the peas out of the pods straight off the vine! She was also a good cow dog :) ~Sara
