3 T. sweet butter
2 T. olive oil
2 c. heavy whipping cream
2 cloves garlic, minced - I ALWAYS add WAAAY more because who doesn't LOVE garlic?!
1/4 tsp. ground white pepper
1/2 c. grated parmesan cheese
3/4 c. shredded mozzarella cheese
1 (12 oz.) package of fettuccine or angel hair pasta - I feel the fettuccine does better at grabbing hold of that yummy sauce

1. Melt butter and olive oil in a saucepan over medium-low heat. Add the cream, garlic and white pepper and bring it to just under a boil. Reduce the heat and simmer for about 5 minutes stirring often to let it reduce just a little.

2. At this point I usually start my pasta (continue making the sauce but only cook the pasta until it's al dente for some extra bite)

3. Stir the parmesan cheese in and simmer until the sauce is thickened and smooth, usually takes anywhere between 8 to 10 minutes. Then add the mozzarella and stir until it's melted, about 5 minutes.

4. Spoon sauce over finished pasta and serve.

- You can add any protein you want to the sauce while cooking it. I recommend smoked salmon for some extra YUMMINESS.

- Serve with some french bread and a light salad.
