4 medium sweet potatoes
1/2 c. brown sugar
1 tbsp. corn starch
1/4 tsp. salt
1 c. orange juice
1/4 c. raisins
1/4 c. butter or less
2 tbsp. walnuts, chopped
1/2 tsp. orange peel, grated

Directions:
Directions:
Start by bringing salted water to a boil and cook sweet potatoes until tender. Then drain, peel and cut in half lengthwise. Arrange in a shallow baking dish and sprinkle lightly with salt.

In a sauce pan, mix the brown sugar, cornstarch, salt, orange juice and raisins. Heat until mixture comes to a boil, stirring constantly. Add your butter, chopped walnuts and grated orange peel. Stir until butter is melted and well incorporated.

Pour mixture over yams and bake uncovered at 350 degrees for 20 minutes or until potatoes are well glazed.
