4 boneless, skinless chicken breasts
1 cup canola oil
1 cup bread crumbs
1/4 tsp. oregano
1/4 tsp. basil
1/2 cup ground Parmesan cheese
Salt and pepper to taste
1/2 cup flour
2 eggs, beaten
1 jar marinara sauce
1 cup shredded mozzarella cheese

Directions:
Directions:
Heat oil in large skillet. Combine bread crumbs, herbs and Parmesan cheese in a mixing bowl. Salt and pepper chicken, roll in flour, dip in eggs and coat in bread crumb mixture. Place chicken in heated oil and cook on both sides until golden brown, about 6 min. per side. Place chicken on paper towels to drain. Pour out remaining oil and return chicken to skillet. Pour marinara sauce over chicken, sprinkle with mozzarella cheese and cover for 5 min. on low heat. Serve with Angelhair, Vermicelli or your favorite pasta.
