6 whole eggs
1 c of dice tomatoes
1/2 c of dice onions
1/4 c of green peppers or jalapeno peppers
salt and pepper
4 tbsp. of canola oil
6 corn Tortillas

Directions:
Directions:
In a medium frying pan sautéed onions, add dice tomatoes, salt and pepper.
add the green or jalapeno peppers
In a bowl place eggs and mix
Add the eggs to the tomato and onion mix and cook until there is no water
Served with the preheated corn tortillas
serves 3 people

You can also add a 2 tbsp. of powder chicken stock instead of the salt to give extra flavor
