1 lb. bacon
3 tbsp. butter
1/2 C. onions, chopped
3 tbsp. roasted red peppers, chopped
1-4 oz. can chopped green chilies, drained
7 thick bread slices, cut into 1" pieces
1 1/3 C. Monterey Jack or Pepper Jack Cheese, shredded
8 eggs
2 C. milk
1/3 tsp. chili powder

Heat a large skillet over medium heat. Add half of bacon and cook until crisp. Drain. Discard drippings. Repeat with remaining bacon. Crumble. Heat butter until melted. Add onions and cook until translucent. Stir in roasted peppers and chilies. Remove from heat and set aside. Grease a 9x13" glass pan. Arrange bread cubes in the bottom of pan. Sprinkle bacon and cheese over bread. Whisk eggs in bowl until beaten. Add milk and chili powder, mix well. Stir in onion mixture. Pour over top of casserole. Cover with plastic wrap and refrigerate at least 3 hours or overnight. Remove casserole from refrigerator and let stand for 30 min. Preheat oven to 300 degrees. Remove plastic wrap and bake 60-70 minutes, until center is set. Let stand 10 minutes.
