Beef Roast
1 Small Bag Baby Carrots
4 Large Potatoes
2 Stalks of Celery
1 Envelope Onion Soup

Directions:
Directions:
Cut potatoes and carrots into chunks. Slice Celery into small chunks. Place the carrots, potatoes and celery into the crock pot. Place roast on top of the veggies, Sprinkle the onion soup mix over the roast and add the water. Cook on low in the crock put for 8-10 hours. If you need to cook it longer you can put it into the crock pot frozen.

My Mom used to make this all of the time. Before she used the crock pot she would make it in the oven. My Grandma Wardlow made a roast for dinner every Sunday. She would also make noodles and green beans to go with the potatoes and carrots. Every time I eat this I think of them.
