Fresh Haddock
3 cups homemade cornbread
1/2 lb chourico
1/4 cup chopped red onion
2 tbsp chopped red pepper
1/4 tsp pepper
Chicken broth
Butter

Directions:
Directions:
Fry chourico, onion and pepper until cooked. Add pepper. Mix in with crumbled cornbread and add chicken broth until desired consistency.

Put small amount of butter into bottom of baking dish. Put haddock on top and top with stuffing mixture. Bake at 400 degrees covered with foil for 20 minutes and uncovered for an additionally 10 minutes. Broil additional minute if top is not browned.
