Pumpkin Crisp Bars Recipe

1-15 oz. can pumpkin (approx. 2 cups)
1/2 c. granulated sugar
1/2 c. packed brown sugar (or coconut sugar)
3 eggs, lightly beaten
4 tsp. pumpkin pie spice*
1-12 oz. can evaporated milk

Streusel Topping:
1 c. rolled oats
1 c. packed brown sugar
1/2 c. all-purpose flour
1/2 tsp. cinnamon
1/2 c. margarine or butter
1 1/2 c. pecans, opt.

Whipped topping or ice cream for serving

*Pumpkin Pie Spice:
2 1/2 tsp. cinnamon
3/4 tsp. nutmeg
3/4 tsp. allspice OR 1/2 tsp. cloves

Directions:
Directions:
Preheat oven to 350º F. Spray one 10 x 13" glass pan or two 9" pie pans.

Filling: In a large mixing bowl, mix together the pumpkin, sugars, eggs, and spices. Whisk in evaporated milk. Pour into the prepared pan.

Bake filling for 35 minutes; meanwhile, prepare the topping.

Topping: Combine oats, brown sugar, flour, and spices. Cut in butter until mixture resembles coarse crumbs.

After filling has baked for 35 minutes, remove the pan from the oven and sprinkle with pecans (if using) and then topping mix.

Bake additional 20-25 minutes or until the topping is golden brown and a toothpick inserted in the filling comes out clean.

Let cool completely before cutting into bars. Serve with whipped cream. Keeps well in the refrigerator with plastic wrap. Makes 24 bars.
