2 pounds potatoes (red or yellow)
1 c. chopped celery
1/2 c. chopped onion (red or yellow)
1/3 c. chopped sweet pickle (or dill)
1 1/4 c. salad dressing (not real mayonnaise)
2 tsp. sugar
2 tsp. vinegar
2 tsp. yellow table mustard (or Dijon)
1 tsp. salt
4 hard boiled eggs, chopped

Variation: Used cooked & cooled pasta instead of potatoes.

Peel and cube potatoes. Cook in boiling salted water about 10 minutes or till soft, and drain well. Also boil the eggs if needed. Transfer potatoes to a large bowl and let cool before mixing.

Meanwhile, chop all the vegetables. Add the celery, onion, and pickles to the potatoes.

Combine dressing, sugar, vinegar, mustard and salt. Add dressing mixture to the potatoes, and toss lightly to coat. Carefully fold in chopped eggs. Cover and chill thoroughly.

Serves 8. Multiplies easily. Measurements do not need to be exact.

We had this potato salad at Aunt Vivian and Uncle Tom's house in Grant's Pass, Oregon on a visit when the kids were toddlers.
