2 Tbsp. olive oil
2-8 oz. pork chops, about 1" thick
1/4 c. cider vinegar
1 1/2 Tbsp. Splenda or brown sugar
1 Tbsp. soy sauce or coconut aminos
1 small onion, thinly sliced
Sliced carrots (opt.)

Directions:
Directions:
Put oil in a heavy skillet and sear pork chops on both sides. Brown the sliced onion for a couple minutes on the side, and then put them on top of the pork chops.

Stir together vinegar, sweetener, and soy sauce, and pour over the onion and chops. If using carrots, scatter them around the chops in the liquid. Cover and turn burner to low. Let chops simmer, turning at least once, for about 45 minutes. Add water (1/4 cup at a time) as needed to keep food moist.

Serve chops and carrots hot with the onions and pan drippings on them.
