12 oz. mushrooms sliced
2 T. butter
2. T. oil
med. onion chopped
3 cloves garlic minced
1/2 c. while wine or sherry
1 T flour
1 c. heavy cream or half and half
Salt and pepper to taste

Directions:
Directions:
In a large saucepan melt butter and add oil. Add the chopped onion and the minced garlic. Cook until just transparent. Add salt and pepper to taste Add sliced mushrooms and sauté for a short time to marry flavors. Sprinkle flour over mushroom mixture. Add the wine, Cook off alcohol approximately. 2 minuets. Add the cream and cook to reduce and thicken. Adjust seasonings with salt and pepper.

I prefer sherry for taste, but the sauce may be slightly pink from the wine. White wine for white sauce. Use over browned boneless chicken breasts.
