2 c. diced potatoes
1 can (2 c.) white beans
1/3 c. sliced celery [or generous amount of washed & sliced baby bok choy]
1/3 c. finely chopped onion [or garlic]
1-2 c. diced cooked ham
3 1/4 c. water
2 Tbsp. chicken bouillon granules or broth base [6 cubes]
1/2 tsp. salt, or to taste
1 tsp. white or black pepper, or to taste

5 Tbsp. butter
5 Tbsp. all-purpose flour
2 c. milk

Directions:
Directions:
Combine vegetables, ham, and water in a stockpot, and bring to a boil. Cook on medium till potatoes are tender, about 10-15 minutes. Stir in bouillon, salt, and pepper.

In a separate saucepan, melt butter on medium-low. Gradually whisk in flour; cook and stir one minute until thick. Stir in milk slowly so as not to allow lumps to form. Continue stirring on medium-low until thick, 4-5 minutes.

Stir milk into stockpot. Cook soup till heated through and serve. 8 servings.

First made this when Diane LaRue and John & Lila Fields were visiting on Easter weekend 2014. Then we went and looked at wigs, but it turned out they weren't needed (yay!). Adapted from Ellie11's recipe on allrecipes.com.
