1/2 c. butter
2 medium onions, diced
2 stalks celery, diced
1 potato, diced
about 3 cups chicken broth
1 tbsp each: dried basil, dried oregano, celery salt
2 tbsp paprika
salt and pepper
3 dashes hot sauce
1 cup heavy cream
about 2L milk
1 lb of white fish (haddock, cod, sole or tilapia)
Pick 2 (fresh, frozen or canned): crab (1/2 lb), shrimp (1/2 lb), scallops (1/2 lb), lobster (1/2 lb)

In a large dutch oven, melt butter and saute onion and celery over medium heat - allow to soften a little (3-4 minutes). Add potato and enough chicken broth to barely cover. Cook until potato is tender. Add dry spices and hot sauce.

Layer the fish and shellfish on top. Add just enough chicken broth to barely cover. Cook until fish barely flakes. Add the cream and top up with milk.

DO NOT ALLOW THE CHOWDER TO BOIL. Allow chowder to warm through - keep just below a simmer until serving, or refrigerate and warm slowly to serve.
