1 cup broccoli florets
1/2 cup chopped red bell peppers
1/4 cup chopped green onions
1.5 cups (8 oz) Turkey ham cubed
1 cup frozen hashbrowns, thawed
2.5 cups egg substitute
1/4 tsp ground black pepper
1/2 cup shredded cheddar cheese

Directions:
Preheat over to 350º. Chop broccoli and vegetables. Lightly spray skillet with vegetable spray. Cook vegetables over medium heat for 4 to 5 minutes or until tender. Add turkey ham and hashbrowns. Cook an additional 2 minutes stirring frequently. Whisk egg substitute with pepper and pour over vegetables in skillet. Cover. Cook over medium-low heat for 8 to 10 minutes or until egg mixture is set. Remove from heat and sprinkle with cheese. Bake uncovered 5 to 7 minutes or just until cheese is melted. Remove from oven and serve.
