Olive oil
2 Tilapia filets
1 tbsp. cumin
1/4 tsp. cayenne pepper
1 tsp. chili powder
2 cloves garlic
2 stalks of green onion, chopped
1 red pepper, diced
1 c. corn (canned)
1 c. black beans (canned)
Salt and Pepper
1/2 avocado, cubed
2 c. cooked rice

Directions:
Directions:
Mix together cumin, cayenne and chili. Rub on tilapia filets. Saute in pan, with olive oil, for 3-4 minutes per side. Remove and shred with fork. Combine garlic, green onion, red pepper and corn; saute until corn is roasted. Add black beans and heat through. Layer into bowl with rice. Serve topped with avocado.
