3/4 cup butter (softened)
3 tbsp. sugar
2 tsp. lemon juice
1 1/4 cup flour
1/2 cup cornstarch
1 tsp. lemon peel (grated)
Lemon Frosting:
1/4 cup butter (softened)
1 cup 10x sugar
2 tsp. lemon juice
1 tsp. grated lemon peel
Directions:
Directions:
In small bowl cream butter & sugar until fluffy
Beat in lemon juice
Combine flour,cornstarch & lemon peel - gradually add to creamed mixture
Shape 1 1/2 in roll - wrap in plastic
Refrigerate for 1 hour or until firm
Unwrap and slice 1/4 in thick
Place 2 inches apart on ungreased baking sheets
Bake at 350 -8 -10 mins. ( until edges are golden brown) Cool completely
Icing
Small bowl beat 10x sugar, butter, lemon juice & peel. Spread over cookies
