1 five lb. bag red potatoes
3-4 boiled eggs
1 cup mayonnaise
1 tsp mustard
I/2 cup sweet or dill pickles (your preference)
Small chopped onion

Directions:
Directions:
Clean & peel potatoes and cut into chunks. Place in boiler of water along with your eggs. Let cook until boiling together. When potatoes are done remove boiler from heat then place boiled eggs into bowl of cold water. In the hot boiler with the potatoes stir in mayonnaise, pickles and mustard (optional). Stir in onions. Peel boiled eggs, chop two or three of them and mix into potatoes. Now take last egg and slice for decorating on top. May sprinkle with soft shakes of paprika if desired.

Lisa says, "I like to use the little green onions & add some juice from the pickles to make it less dry sometimes. It depends on the starchiness of the potato I used."
