4 cups flour
2 tsps. baking soda
Pinch of salt
2 cups brown sugar
1 cup solid shortening
2 eggs
1 cup buttermilk
1 tsp. vanilla

ICING:
1 stick (1/2 cup) butter, softened
3 ounces cream cheese, soft
1 tsp vanilla
1 (16 ounce) box confectioners' sugar

Directions:
Directions:
Whisk together flour, baking soda, and salt. Set aside.

Cream brown sugar and shortening until light and fluffy. Add eggs and mix. Add buttermilk and flour alternately to creamed mixture, beginning and ending with flour. Add vanilla.

Chill dough. When ready to bake, heat oven to 350 degrees. Grease cookie sheets slightly. When correct oven temperature has reached, drop dough by spoonfuls onto cookie sheet. A small ice cream scoop also can be used. Replace remaining dough in refrigerator until ready to bake another sheet.

Bake 8-10 minutes. Do not overbake.

Place cookies on wire racks to cool completely. Frost with cream cheese icing and put a walnut piece on top of each cookie if desired.

ICING:
Cream together butter and cream cheese. Add vanilla. Slowly beat in sugar. Mix until smooth and creamy and of spreading consistency. Add milk if frosting is too thick.
