2 tbsp. olive oil
1 leek, sliced finely (white part only)
1 clove garlic, minced
1/4 tsp. cayenne pepper
1 tbsp. peanut butter
1 sweet potato, cubed
900 mL vegetable broth
crushed peanuts

Directions:
Directions:
Heat oil in soup pot over medium heat. Add leeks and garlic, and simmer until giving off a good aroma (approx. 3-4 minutes). Add cayenne, peanut butter, sweet potato and vegetable broth; bring to boil. Reduce heat to medium-low and simmer until sweet potatoes are softened (approx. 25 minutes).

Using immersion blender, blend soup until smooth. (If you don't have an immersion blender, you can use a regular blender - be cautious! This is hot stuff!).

Serve warm, garnished with crushed peanuts.
