3 whole chicken breasts (just boil/simmer them in water - OR use rotisserie
chicken from market)
1 c. pecan or walnut halves (honey roasted pecans are the best)
1-1/2 tbsp. chopped fresh tarragon leaves
1 c. chopped celery
1-1/2 c. red or green grape halves
1/2 c. chopped green apple
1/2 c. mayonnaise
1/2 c. sour cream

Directions:

Roast 1 c. walnut or pecan halves and roughly chop

DRESSING: Mix together mayonnaise, sour cream, salt and pepper to taste then fold in tarragon leaves.

Add chicken, celery, grapes and apple to a large bowl. Pour the dressing over the chicken and toss well. Cover and refrigerate 6 hours or overnight. Just before serving toss in pecans and stir.

Serve on lettuce leaves or use for filling for Croissant rolls. Serves 8 - 12

A friend of ours visited us while we were in Bonners Ferry, Idaho (where we were staying for three weeks and brought these chicken salad croissant sandwiches,. They live in Coeur d'lene (sp?). I was so impressed with the sandwich that I asked to have the recipe. She obliged!
