1 pkg. frozen hash browns (Ore-Ida patties if possible)
1 (8-0z.) sour cream
(12-oz.) American cheese, grated (I can't ever find block American cheese so I just use cheddar)
1 c. cream of chicken soup
1/2 c. melted butter
1/2 t. salt
1/4 t. pepper

2 c. crushed corn flakes
1/4 c. melted butter

Directions:
Place thawed potatoes in 9 x 13 baking dish (there are 9 patties in the box - 8 will fit in pan, then I break apart the last one in fill in the spaces). Mix sour cream, cheese, soup, melted butter, salt and pepper. Pour on top of potatoes.

Topping:
Mix corn flakes and butter until corn flakes are coated. I put the butter in a pan to heat on the stove while coating the corn flakes. Spread over top.

Cook at 350º for 45 minutes. Let set a few minutes before serving.

This is Melissa Casey's recipe from the Summer Dreams cookbook. What's funny is that it has become my family's breakfast tradition on Christmas morning yet, Melissa says she never thought of it as breakfast food.
