Directions:Brown on all sides in hot fat along with the onions, using crisco or whatever, on high heat, so it won’t take long. Do not leave the stove! you are just searing in the juices, so it happens quickly. Place into oven proof roaster or large skillet with lid, add maybe a few tablespoons of water. Cover and roast in oven about 325 degrees approx. 2 and 1/2 -3 hours.....It is done when it shreds and falls apart nicely with a fork. It might not even take that long in the oven, so watch closely. Or it might take longer....each roast is different. Can use a meat thermometer. |

Notes: GRANNY SAYS.....This is the roast beef I grew up on. My mom used to make a lot of roast beef and they were so tender and juicy. She showed me how to make it and I watched her many times, then started making it a lot when I was married, we were kind of a meat and potato type family. Veggies ( carrots, celery and potatoes or whatever) may be added the last 45 minutes or so with this roast if you want. Or just serve with mashed potatoes, and gravy, a side of corn and lettuce salad. It took me a long while to perfect it, and to this day, sometimes it turns out kind of dry, but then after slicing, you just smother it with the juices from the pan to hide your sins....and also, that’s what gravy is for.... : ) But do try to find the Chuck roast, best flavor....lots of fat for flavor.
BACON.....YUMMMM
STOVETOP Place a single layer of slices in an unheated skillet. Cook over Medium heat, turning frequently, 8-10 minutes or until crisp. Drain on paper towels.
OVEN Place in a single layer in a shallow baking pan (cookie sheet) and cook at 400 degrees for 10-12 minutes or until crisp. Clean up easier if pan is lined with foil. May also use a rack in your pan.
MICROWAVE
Place in a single layer on a paper-towel lined plate. Cover with additional paper towel. Microwave on high until desired crispness. For 2 slices.....1-1/2 to 2 minutes. For 4 slices 2-1/2 to 3 minutes.
GRILL
Grill over medium heat turning frequently. Be careful to avoid flare-ups.
