Ingredients: 8 Chicken thighs, skin on 3/4 Cup diced onion 1 cup diced celery 1 red or yellow bell pepper chopped fine 25 cloves of garlic minced fine 1 cup low sodium chicken broth Kosher salt 1/2 teaspoon celery seed or celery salt Fresh cracked pepper 1/2 teaspoon of dried basil 1/2 stick of unsalted butter Canola Oil

Directions:Preheat your oven to 325º
In a large cast iron skillet or Dutch oven add enough canola oil to coat the pan and brown your thighs until golden brown on all sides. Set aside. At medium heat add half of your butter to the pan and sauté the celery,onions and bell peppers until soft, about 10 minutes. Add your minced garlic and cook another two or three minutes. add the remaining butter and seasonings. cook another minute or so until well incorporated and the butter has melted.
Make pockets in the veggies and return the thighs back to the pan. Add enough chicken stock to cover the veggies but not submerge the chicken. Cover and cook in your oven for 20 minutes. Remove the lid and continue cooking for another 15 minutes until most of the liquid has cooked off.
Serve immediately over mashed potatoes. |
