3 medium cucumbers with skins on, minced, to equal 4 cups
1 large onion, minced
3 red peppers, minced (remove seeds first)
1 green pepper minced, minus seeds
1 medium cauliflower, minced
4 cups minced green tomatoes (about 4 1/2 pounds)
1/2 c pickling salt
1 tsp tumeric powder
4 1/2 c sugar
2 c white vinegar (not pickling)

Mince all vegetables (food processor is a good method). Put into large pot and cover with water, add 1/2 c pickling salt and let stand for 30 minutes. Drain well. Place drained mixture into a large pot and add 1 tsp tumeric, 4 1/2 cups sugar & 2 cups vinegar. Bring to a boil and cook at a rolling boil for 30 minutes.
Hot pack into hot (kept in oven at 200 degrees until ready to fill) sterilized jars - do not need to put in a water bath.

A wonderful hamburger relish, or with any beef - roast, etc.
