6 chicken breast halves (with skin and bones)
1 T. salt
1 onion, sliced
2-4 stalks celery with leaves

2 c. celery, chopped
juice from one lemon
1 t. salt
1/2 t. black pepper
1 c. mayonnaise
1/8 t. cayenne pepper
1/2 c slivered almonds (optional)
1/4 c. grapes, helved (optional0

Directions:
Directions:
Fill a large pot 2/3 with water and bring to a boil. Add chicken breasts, salt, onion, and celery. Reduce heat and simmer for 1 hour. Remove skin and bones from chicken and cut meat into bite size pieces.

In a big bowl, mix chicken, celery, lemon juice, salt, pepper, mayonnaise, cayenne pepper, and optional ingredients if needed. Mix well, refrigerate for at least 3 hours or overnight.

If you don't have time to cook the chicken, buy one or two rotisserie chickens already cooked from the grocery store.

If you don't have grapes, you can use apples or mandarin oranges.

May substitute pecans for almonds. I usually toast the nuts before adding to the salad.

This recipe came from Sharon (Bell) Seal who was a camper when I was a counselor at Camp Arrowhead. Her daughters went to camp with my daughters.
