Yellow cake mix (or any flavor)
6 egg whites
1/2 tsp. cream of tartar
1 C. sugar
2 quart ice cream any flavor, slightly softened

Directions:
Directions:
Bake cake mix according to directions using 8-9 inch pans. Use only one layer. Freeze the other layer for another use. Place this layer on foil lined cookie sheet or pizza pan.
Beat 6 egg whites with the cream of tartar until stiff.
Gradually beat in sugar. Continue beating hard until meringue is stiff and glossy.
Place softened ice cream on top of cake layer, cover completely with thick layer of the meringue.
Place in very hot oven 500 degrees for 3-5 minutes just until meringue is delicately browned. Don’t leave the kitchen!! Will brown very quickly at this temp!! Set a timer!!
Slip the cake carefully onto serving plate and serve immediately.

GRANNY SAYS....this is one beautiful and amazing dessert! When I was a little girl and mom got her new, 1st edition 1950 Betty Crocker cookbook, which I still have by the way, I begged my sisters, please, may I have this memory when we divided up Mom’s things....anyway.......When she got the cookbook new, I remember looking at it for hours on end and there was this one recipe and picture that I lusted for, for a long time until one day I finally got up courage to make it. And this is the recipe.....It looks so hard and elegant, didn’t think I would ever be able to make it, but I did and it was actually quite easy. But the original recipe calls for the base to be a home-made sponge cake. Which I did at the time and which you can do too if you feel that ambitious. We didn’t have much in cake mixes at that time, if any, but a cake mix will do just fine. The picture showed the yellow sponge cake and strawberry ice cream and the white meringue and it made such a beautiful picture to me.....and to this day still does. ( yeah, I’m entertained easily). Don’t think I’ve ever made it since, well maybe once, but it made such a cooking impression on me at the time. I’m sure my dad was impressed and wowed too, don’t remember his comments this time. But we were just so amazed that you could put a cake with ice cream into the oven and it didn’t melt. Kind of like magic in the eyes of a little girl like me. Of course it is in the oven for only a few minutes and it should be completely sealed with the meringue, to keep it from melting. I have never forgotten this recipe and that beautiful picture.
