LEMON BARS Recipe

3/4 C.butter
1/3 C. powdered sugar
1 and 1/2 c. flour

Cut butter into the flour and powdered sugar until crumbly and press lightly into 9x 13 in. pan. This is the crust.
Bake 350 for 20 minutes.

Topping.....while the crust is baking....
3 T. flour
1 and 1/2C. sugar
Mix together then add:
3 eggs
1/3 C. lemon juice
Mix well and pour over hot crust as soon as it comes out of oven.
Bake 20 min. more at 350 degrees.
Cool 5 minutes, then dust lightly with powdered sugar on top.

GRANNY SAYS.....this is a very old recipe that I got from one of the nurse aids that I worked with many years ago at Mercy hospital, back in Cedar Rapids. Wish I could remember her name, I can see her face but not her name....anyway she was one of the several wonderful nurse aids that we worked with on a daily basis and of whom we couldn’t do our jobs very well without. Those gals worked so hard and tirelessly and were such nice folks. Anyway think she brought this in to work for a pot luck or something and I don’t think I had ever had lemon bars before and HAD to have her recipe. I have made it many times since, it was a staple at pot lucks and Christmas time when I worked in the NICU at TMC. Everybody always loves lemon bars. And they are very easy to make too, for such a pretty and delicate dessert.
