JETTA'S PUMPKIN BARS Recipe

1 C. oil
2 C. sugar
4 eggs
1 can pumpkin, (2 C.) NOT the pie mix, just plain pumpkin

Mix together then add dry ingredients

2 C. flour
2 tsp. Baking powder
1 tsp. soda
1 and 1/2 tsp. cinnamon

Directions:

Bake 350 about 20-25 minutes in greased and floured large deep cookie sheet, or a 9x13 pan AND a 8x8 pan.
Frost when cool.....makes big batch.

Frosting....
4 oz. cream cheese softened
1/2 stick butter softened ( 4 T.)
1 tsp. vanilla
3 C. powdered sugar
Beat well till smooth and creamy.

GRANNY SAYS.....I got this recipe from a very old friend I used to work with at Mercy hospital when I was first married....Jetta Kuba was a great gal, loved working with her. Think she had kids my age at that time, but we worked together many evening shifts also with another good friend Karen Wallis. We all had some great times together for the 11 years I worked there, would even meet for coffee sometimes at each others’ homes. It was in the ’60’s....
Anyway, Jetta made these bars one time and I tasted them and had to have the recipe, they were so good! So she wrote out the recipe for me, I attempted to make them and they just wouldn’t bake and get done for me....they were very “runny”. I couldn’t understand why when her’s were so good. She asked me about them next time I saw her and I told her they just didn’t turn out for me. She asked to see the recipe she wrote out for me, she thought maybe she wrote it wrong. As it was she forgot to add the FLOUR!! Duh....no wonder they are runny, ha....We laughed about that for a long time! I was still a very young novice cooker/baker, so I didn’t notice there was no flour in a recipe when there probably should be....live and learn....ha. Good times....I miss those ladies to this day....Jetta died a few years back, but I still send and receive Christmas cards from Karen, she and husband live in Missouri.
