20 Roam tomatoes or more, halved and seeded
1/4 cup olive oil
1/2 teaspoon kosher salt
1 teaspoon pepper
1 cup finely diced onion
2 teaspoons minced garlic
1 tablespoon finely chopped fresh oregano leaves
1 tablespoon finely chopped fresh thyme leaves
1 cup dry white wine (for sauce if you go that direction)

Preheat oven to 325 degrees F.

Make sure that your onions and garlic is minced really, really fine, almost to a paste.

Cut your tomatoes in half length wise (top to bottom) and using a spoon gently scoop out all the seeds being careful not to remove any of the “ meat” of the tomato. In 2 (13 by 9-inch) pans or one really big pan place your tomato halves cut side up. Sprinkle with oil, salt and pepper, onion, garlic, and herbs. Bake tomatoes for 2 hours. Check the tomatoes after 1 hour and turn down the heat if they seem to be cooking too quickly. Then turn the oven to 400 degrees and bake another 30 minutes. Remove from the oven and let cool to a warm temperature.

For Past; using a spoon carefully scoop out the contents of the tomatoes and discard the tomato skins.

For sauce; Put the paste in a small food processor and process until smooth. Put the paste into a small saucepan and add your white wine, bring to a boil, reduce heat to low and cook for 5 minutes until the wine is totally Incorporated and slightly reduced.

Sound difficult, NOT. Is it really good. YES! The preparation only takes a few minutes and then you can throw it in the oven and forget about it. The homemade tomato paste is fantastic. Use it in spigot sauce or smear it on garlic toast with tomatoes, onions and olive oil on top (Tapas). WARNING: This stuff is addicting!
