1 large egg
¼ cup brown sugar
1 teaspoon pure vanilla extract
½ teaspoon salt
2 cups unsweetened coconut milk (I used regular whole milk and it turned out great)
3 tablespoons melted coconut oil
2 cups rolled oats
½ cup unsweetened coconut
1 teaspoon baking powder
1 cup blueberries (frozen or fresh)
1 cup cranberries (sliced in half)
1/3 cup sliced almonds
1/3 cup chopped pecans

Directions:

1. Preheat over to 350 degrees
2. In a large bowl whisk together egg, sugar, vanilla, and salt.
3. Add in coconut milk and oil and whisk until combined.
4. Stir in rolled oats, unsweetened coconut, baking powder, blueberries, cranberries, almonds, and pecans.
5. Pour into a 8×8 baking pan, sprayed with cooking spray, and baked for 40-50 minutes (until speckled with golden brown on top). Let cool for 5 minutes then cut into 9 pieces and serve with a drizzle of pure maple syrup (if desired).

Great to make ahead of time. Refrigerate and pop a piece in the toaster oven/microwave in the morning, and you have a delicious, filling breakfast in no time at all.
