2 c. Bananas, mashed (3-4 small bananas)
2 Eggs
2 c. All-purpose flour
1 tsp. Baking soda
1-1/4 c. Brown sugar, divided
2 tsp. Cinnamon, divided
1 pinch Nutmeg
1 pinch Salt
1 tsp. Vanilla extract
1 box Vanilla or Banana pudding mix, instant
1/2 c. Butter, softened
1/3 c. Greek yogurt

Preheat oven to 350 degrees. Grease a 9-inch loaf pan and set aside. Meanwhile, in a large bowl, whisk butter and 3/4 c. brown sugar until blended. Whisk in eggs, yogurt, banana, and vanilla until combined. Lastly, add 1 tsp. cinnamon, nutmeg, flour, baking soda, salt, and pudding mix, careful not to overmix (overmixing will cause your bread to be tough). Batter may thick and clumpy, this is okay. Spread the batter into greased pan. In a small bowl, combine remaining brown sugar and cinnamon with a spoon until combined. Liberally sprinkle the mixture on top of banana bread, patting it down if necessary. Bake bread for 30 minutes, then tent with foil very loosely. Continue baking for an additional 30 minutes. Allow bread to cool completely before cutting and serving.
