2 c. Elbow Macaroni, uncooked
1/2 c. Butter
1/4 c. All-purpose flour
1-1/2 c. Milk
8 oz. container sour cream
8 oz. pkg. American cheese slices, chopped
1/2 c. Grated Parmesan Cheese
1/2 tsp. Salt
1/2 tsp. Dry Mustard
2 c. Shredded Cheddar Cheese

Cook macaroni according to directions on package. Drain and place in a greased 2-quart casserole dish. In a saucepan over medium heat, melt butter; add flour and milk. Stir mixture until it thickens. Reduce heat; add sour cream, American cheese, 1/4 c. Parmesan cheese, salt and mustard. Simmer, stirring constantly, until cheese is melted. Add Cheddar cheese to macaroni; toss. Pour butter mixture over macaroni; mix well. Sprinkle with remaining Parmesan cheese. Bake, uncovered at 350 degrees for 30-40 minutes, until bubbly and golden. Serves 8
