German Coffee Cake Recipe

1 Cup sugar
1 Cup melted shortening
2 tsp salt
1 tsp nutmeg
3 cups warm water or milk, scalded
2 pkg dry Fleischmann's yeast
7 Cups all purpose flour (divided)
2 eggs
cinnamon and sugar mix for topping
melted butter

Directions:
Directions:
Place the first 5 ingredients (with only 4 C flour) in a large mixing bowl and stir well. Add the yeast to the flour, and then add to the mixture and stir well. Add remaining 3 C flour and knead the dough well. Shape in bowl.
Place in warm area and let dough rise for an hour. Remove from bowl and punch down. Let rise again for 30 minutes, remove from bowl and roll out dough to fit greased pans about an inch thick or less. When dough is light and risen, spread melted butter on top and sprinkle mixture white, brown sugar and cinnamon. Bake in 400 degree oven (or 375 if using Pyrex pans) for 10 minutes or until Golden brown. Remove from pans. You may also top the baked coffee cake with more melted butter, sugar and cinnamon.

Note: A double recipe is a little bit too much for our mixer.
Note: use 25% less yeast if using rapid rise
Note: You can also freeze these by preparing everything up to the part about baking it in the oven. Remove from freezer and thaw before baking.

Eric got this recipe from his Aunt Karen, who served it when we stayed at their house. It's great around the holidays, and you can make it in batches and freeze for use later.
