1 15oz. container ricotta cheese
1/2 cp. powdered sugar
2 Tbsp. sugar
1 tsp. vanilla
1/2 cp. semi-sweet mini chocolate chips
2 Pillsbury refrigerated pie crust pastries
3 Tbsp. sugar
1 tsp. cinnamon

Directions:
Preheat oven to 425. Mix first 4 ingredients together with mixer, place in gal. freezer bag and refrigerate. Roll out pie crust dough. Sprinkle with cinnamon and sugar. Roll with rolling pin to push sugar and cinnamon into the dough. Cut out circles using a biscuit cutter. Lightly press circles into ungreased mini muffin tins. Prick bottom of each with fork and bake 8-10 min. Cool and fill with cream mixture (cut off a corner of the freezer bag and squeeze cream into each shell). Sprinkle chocolate chips on top and dust with powdered sugar.
