3/4 c. Sugar
1/3 c. Vegetable or canola oil
2 eggs
1 c. Mashed ripe bananas (about 2 large bananas)
3/4 t. Grated lemon rind
1 1/2 c. All purpose flour
3/4 t. Baking soda
1/2 t. Salt
1/2 c. Chopped nuts

heat oven to 325ºF
In a large bowl, beat together sugar, oil and eggs; add to banana mixture and stir until combined. Fold in nuts. Pour into a well-greased 9 x 5 x 3-inch loaf pan and bake for 50-60 minutes or until it tests done (when a toothpick inserted into middle of bread comes out clean). Remove from pan and cool on wire rack.

Variations: I usually use pecans but walnuts are good too.

Muffins: you can use the same recipe to make 1 dozen muffins. Instead of nuts, I add 1 c. Chocolate chips and bake for 25-30 minutes or more.

If your bananas have turned black and you are not ready to use them, put them in the freezer. To use, microwave bananas on a plate for approximately 20 seconds. The banana will squeeze right out of the peel.
