1 cup yellow cornmeal
1 cup flour
1/2 cup sugar
2 1/2 tsp baking powder
1/4 tsp salt
1 cup buttermilk
6 T butter, melted
1 egg, slightly beaten

Directions:
Directions:
1. Preheat oven to 400º. Grease a 9-inch square baking pan.

2. In medium mixing bowl, stir dry ingredients (cornmeal, flour, sugar, baking powder and salt) and set aside.

3. With a wooden spoon or whisk, stir buttermilk, butter and egg; mix together until moist. Don't overmix. Pour batter into prepared baking pan.

4. Place in oven and bake at 400º for 20-25 minutes. Cornbread is done when edges are slightly browned and a clean knife, inserted into the center, comes out clean. Center should be moist (not mushy, but not too dry). Don't overbake.

5. Serve warm, with or without butter.
